Q What is a soft-shell lobster?
It’s natural that the lobsters shed their shells when they are growing. After hatching from their eggs, the lobsters have to shed many shell to grow up.
A soft-shell is edible from head to tail. Normally, most parts of a lobster are not edible. Eating a soft-shell lobster not only means eating more parts of an ingredient, but also experiencing a novel and fresh taste.
Different from regular air-transported or wild hard-shell lobsters that become thinner in the tanks, our soft-shells lobsters are all well fed with natural organic ingredients. They shed naturally and have fleshy meat and abundant eggs.
After shedding shells, the lobsters will be captured immediately, fast frozen and vacuum packaged. They taste like live lobsters. With our cultivation method, our lobsters are fresh, fleshy and succulent.

Q What are the differences between lobsters and crayfish?Crayfish have claws, while lobsters do not.
Other differences between crayfish and lobsters, including appearance, scientific categorization, habits and natural habitat, etc., are as follow.
Lobsters have longer and thicker antennas that have many stingers.
Crayfish have thinner and shorter antennas, but their first pair of legs are replaced with a pair of claws.

Lobsters are categorized as Archelata, Pleocyemata, Decapoda, Crustacea. They live and grow in seawater.
In Taiwan, the common edible types of lobsters include “Blue Dragon”, “Blossom”, “Japanese”, “Big Head”, “White Beard”, “Pearl”, etc. Some common imported lobsters that can be seen in Taiwan include “Gold”, “Rose”, “Cuban” and “Brazilian”, etc.
Crayfish is categorized as Astacidea, Pleocyemata, Decapod, Crustacea. Some of them live and grow in fresh water while others live and grow in seawater.
The most common crayfish in Taiwan is Boston Crayfish. Most Boston Crayfish in Taiwan are cultivated in fish farms or imported.
Lobsters are gregarious and they migrate in groups. They are also nocturnal. Lobsters´ diet includes shellfish, shrimps, crabs, snails, limpets and algae. They like to live among rocks and coral reefs.
Crayfish lives between the rocks in the shallow sea or a hole on the seabed, feeding on shellfish, small crustaceans and sometimes algae.
